  • Parchment Paper
  • 8-inch Bread Loaf Pan
  • Cooking Spray or Neutral Oil (like vegetable or canola oil)
  • 1 Small Mixing Bowl
  • 2 Medium Mixing Bowls
  • Whisk
  • Baking Rack

 

Components and Ingredients

Bread Ingredients:

  • 2-3 tbsp. Chia Seeds
  • 1 ¾ cup Gluten-Free 1:1 Flour (sifted)
  • 2/3 cup Olive Oil
  • 1 ½ tsp. Baking Powder
  • 3 Eggs
  • ¼ tsp. Baking Soda
  • 3 tbsp. Lemon Juice
  • 3 Lemons (zested)
  • ¼ tsp. Fine Sea Salt
  • 1/3 cup Oat Milk
  • 1 cup Cane Sugar
  • 1/3 cup Cashew Yogurt

 

Glaze Ingredients:

  • ¾ cup Powdered Sugar (sifted)
  • 2 tbsp. Lemon Juice

 

Instructions:

  1. Preheat your oven to 350°F.
  2. Using parchment paper, line the loaf pan then coat with cooking spray or neutral oil of choice.
  3. In a medium mixing bowl, combine dry ingredients including sea salt, flour, baking soda, and baking powder sifting the ingredients evenly.
  4. In another medium mixing bowl, mix sugar and lemon zest until evenly combined for a texture of wet sand.
  5. Add eggs, yogurt, lemon juice, and milk with the sugar/zest mixture whisking to evenly combine for the wet ingredient mixture.
  6. Add chia seeds and olive oil to the wet ingredient mixture, then evenly combine.
  7. Gently combine the dry and wet ingredients together in one mixing bowl.
  8. Place the bread mixture in the lined bread loaf pan.
  9. Bake for approximately 1 hour or until the center of the loaf is completely set.
  10. Prepare the glaze while the bread is baking by whisking the sifted powdered sugar and lemon juice together in a small mixing bowl. Whisk until a thick glaze forms.
  11. Once the bread loaf is completely set, remove it from the oven.
  12. Remove the loaf from the pan and transfer it onto a baking rack to cool.
  13. While the bread loaf is still warm, drizzle the glaze over the loaf.
  14. Allow for the bread loaf to completely cool before slicing.
  15. Slice, serve, and enjoy.
