  • 4 large bell peppers, any color

  • 1 cup of diced tomatoes
  • 1 cup of corn kernels
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • ½ cup of shredded low-fat cheddar cheese (optional)

 

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine cooked quinoa, black beans, diced tomatoes, corn kernels, onion, garlic, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
